Rava Uttapam

 “Eat breakfast like a king, lunch like a prince, and dinner like a pauper” – old saying.

The benefits of a healthy breakfast are known to us all but between late nights and demanding deadlines, most of us don’t get the time to make ourselves a nice fresh breakfast which does not come from a ready-to-eat packet. Therefore I’ve thought of a list of quick and healthy food options for breakfast which can be cooked easily and do not require a lot of prep time either, such as poha, upma, a bowl of muesli with lots of dry fruits in it, oats, whole-wheat bread sandwiches, dhokla, salad bowl, rice flour khichu, moong-dal chilla, vegetable clear soup, boiled eggs, omelettes, a bowl of fresh fruits, cereals, sprout chaat, sukhi bhel, idli, roti rolls, etc.

Another very quick, healthy breakfast option is the rava uttapam, the recipe of which is shared below. It’s very easy to make and tastes good as well. Do give it a try!
  

Ingredients: 

1 cup rava (semolina)
1/2 cup curd
1/2 cup water 
Salt
Oil
1tsp Ginger & green chilly paste
1 small carrot grated
1/3 cabbage thinly sliced
1 small capsicum & onion thinly sliced
1 small tomato diced (optional)
Some chopped Coriander


Method:

1.    Take a bowl and throw in the semolina (rava) add to that the curd and the water. Mix well.

2.    Make sure that the batter is neither too thick nor too runny; alter the quantity of water accordingly.

3.    Now add to the batter, the ginger & green chilly paste, salt as per taste and all the chopped vegetables. Lastly add the chopped coriander and mix all the ingredients nicely.

4.    Now take a non-stick flat pan and smear it with a tsp of oil and then pour about one large scoop of the batter on the pan and quickly spread it into a thin round layer. Try to keep the uttapam as thin as possible so as to make it crispy.


5.    Pour some oil on the edges of the uttapam if necessary. Once brown on one side flip it and then lightly cook the other side as well. You can serve the uttapam with some coriander chutney or ketchup.
